How to Use :
For Soft, Fluffy Mapillai Samba Idiyappam:
- Mix 1 cup of Karigai Mapillai samba Idiyappam Flour with ¼ tsp of salt and ½ spoon coconut oil in a bowl.
- Bring 1–2 cups of water to a rolling boil. Gradually pour the hot water into the flour, stirring continuously, until you reach the desired consistency.
- Avoid adding all the water at once.
- Mix and knead into a smooth, soft dough (add a spoon of oil if needed).
- Fill the dough into an Idiyappam press and press into thin strands over greased plates.
- Steam for 5-7 minutes, cool slightly, and serve.
- Also ideal for making puttu, kolukattai, or other traditional recipes.
- Can be added to dosa batter and any recipe that uses plain rice flour.
Serving Suggestions:
- Serve warm with sweet coconut milk, grated coconut & jaggery, or spicy kurma/chutney.
- Also great for puttu, kolukattai, or any creative homemade dish.
